20 Recipes Kids Should Know by Esme Washburn

Kids of all ages love to help Mom and Dad in the kitchen.  From stirring the cake batter to trying to crack eggs without dropping shell pieces in the mix, kids love to learn how to create fun foods.  To promote this love of cooking, having kid-friendly cookbooks with easy recipes is a great way to provide independence and creativity in the kitchen.  Here is one of my new favorite recipe books just for kids ~ ~ ~ written by kids!

20 Recipes Kids Should Know by Esme Washburn

The perfect book for children, this fun and engaging cookbook is
written and photographed by a pair of young sisters for budding chefs.

Whether
they're helping stir cake batter or producing their own YouTube cooking
channel, kids of all ages are getting increasingly busy in the kitchen.
This cookbook features twenty classic recipes that are fun, healthy,
adaptable, and easy to prepare. From banana bread and the perfect
grilled cheese to breaded chicken and apple pie, each recipe is written
in a clear, accessible style that young cooks of every level will be
able to follow. The author is a young chef whose love of

cooking
developed from her own family's food traditions like baking popovers
with her grandmother and Sunday-night pizza making. By teaching kids
basic recipes that can be adapted in endless ways, this book is the
perfect launching pad to finding their way around the kitchen--or
launching their own cooking careers.

With fun and easy recipes like this one my 11 year old loves for strawberry shortcake (was delicious for my Mother's Day brunch in bed this year)

NestFresh ~ What do you do with your eggs?

NestFresh is a proud member of the National Frozen & Refrigerated Foods Association. We are so excited to have a guest post from them in which they share their favorite egg recipes.

In today’s busy world, we all want tasty, wholesome AND convenient meal solutions. Surprise! The frozen food and dairy aisles offer it all! As an initiative of National Frozen & Refrigerated Foods Association, which promotes the sales and consumption of

frozen and refrigerated foods, Easy Home Meals came to life as a resource to find simple recipes, easy meal ideas, new product information, tips and much more.

We launched our Easy Home Meals blog this past spring to help you find real solutions for your real life needs. Our Easy Home Meals blog is a place to find recipes, meal ideas, tips and tricks and culinary inspiration—with help from shortcuts from the “cool” aisles of the grocery store.

So, what does that have to do with eggs, you may ask? Eggs are especially important to the Easy Home Meals team for their health benefits and versatility. What we love about eggs is that they’re more than just a breakfast staple. You can incorporate eggs into every meal occasion due to their adaptability! Being an egg-sential part of many food menus, eggs seamlessly fit into a variety of cuisines while maintaining a comfort-food appeal. In 2014, American eateries have seen an increase in dishes that highlight eggs from breakfast to dessert. Because of this trend, 2014 is known as “The Year of the Egg” due to the explosion of egg dishes that go from your average morning omelet to global-inspired lunch and dinner entrĂ©es.

Since eggs are an ingredient known for their versatility and nutrition, incorporating them into a variety of dishes works best for those who want delicious and healthy meals. What’s also great is all of the creative possibilities you have with eggs. Between combining eggs with Greek yogurt to make lighter deviled eggs, to topping salads with hard boiled eggs for a protein punch and even having eggs for dinner like the popular steak and eggs dish.

Check out some of our favorite creative recipes using eggs!

Egg-cellent Breakfasts

Tacos aren’t just for lunch or dinner. These Cheesy Egg and Potato Breakfast Tacoscombine cheese, eggs, refrigerated potatoes and refrigerated tortillas for a unique but tasty breakfast!

Think beyond your typical breakfast and use refrigerated biscuit dough to make these delicious Prosciutto and Egg Biscuit Cups!

Egg-tastic Lunches

Combine eggs with sour cream, cottage cheese, noodles, pineapple and a few other ingredients to make this classic European dish known as “kugel” or Pineapple Noodle Pudding!

Cheeseburgers are a lunch staple—take yours to the next level by topping it with a fried egg like in this Cheddar Burger.

Egg-licious Dinners

For those who wish to have a tasty vegetarian option put a unique spin on an Italian classic with Spaghetti with Caramelized Onions and Fried Eggs!

Kick this classic breakfast dish up a notch with spicy cheese and refried beans to make it a dinner— Pepper Jack Huevos and Refried Beans!

Dessert

Eggs are often behind-the-scenes of your most loved desserts—like this Mini Smore Pie!

We also can’t forget this seasonal favorite Eggnog Cheesecake!

Review:

This cookbook is put out by the American Heart Association for heart healthy
cooking as well as shopping and storage tips. The cookbook was full of delicious
recipes such as: Chicken and red lentil soup or Triple citrus refreshers. My
main problem with the book is that with each recipe there was no picture to give
you an idea how the recipe was to look like. Yes there were pictures in the
book, but they were all together in the middle of the book and they were not a
complete showing of all the recipes. I also liked the idea of the nutritional
values per serving listed after each recipe as well as most of the ingredients
in the recipes were one that most people would have in their pantry/cabinets in
the kitchen or easily available at the grocery store.

Gluten Free Made Easy - a great book for fun and easy Gluten Free recipes #review

Gluten-Free Made Easy is the perfect guide to your new lifestyle! Learn dozens of tips and tricks for avoiding gluten and over 150 tasty, simple recipes like Creamy Chicken Taquitos, Margherita Pizza, and even Fudge Chocolate Chip Cookies. Going against the grain has never been easier!

Review

I am very pleased with this book. The recipes were easy to follow. For example the:Cauliflower pizza crust and cheesy bread or the Thai-style cabbage and noodles. The ingredients were majority of the time those that could be found in peoples pantries/cabinets in the kitchen, but there were a few items that would have to be purchased as the grocery store or a specialty/health food store, but they were ones that would not be of great expense to anyone. My only problem with the book is that there were no nutritional values listed after each recipe. There were pictures with each recipe that gave you an idea on how the recipe would look when prepared..

My only problem with the book is that there was no nutritional values listed after each recipe. Also there were pictures with each recipe to look at to give you an idea on how it was to look like when prepared.

Cooking Like the Contestants on Chopped is easier than ever with the Chopped Cookbook ~ #Review

Never again let the question, “What's for dinner?” stump you. The Chopped Cookbook features secrets for combining pantry staples to make exciting meals.

If you’ve ever looked into your fridge, hoping for inspiration to strike, let The Chopped Cookbook help you shake up

weeknight dinners. Just as each basket on Chopped has
many tasty possibilities, so, too, do the contents of your
refrigerator.

By showing you how to spin your favorite ingredients into
188 fun, doable, and delicious recipes—including go-to guides for making
salad dressings and pan sauces, four-ingredient market baskets that can
go in many tasty directions, and ideas for ways to reinvent pasta
dinners—the culinary masterminds at Food Network set you up for mealtime
victory every night.

My Review:

I have watched the show "Chopped" on Food Network several times and loved it.  I enjoy watching many Food Network shows, but often don't think that I could realistically make most of the food presented there because many of the ingredients are not ones I usually have on hand or even choose to purchase.  So, when I found The Chopped Cookbook I was intrigued and thought it would be a fun book to review.  I do not usually make foods in cookbooks that have strange or hard to find ingredients, but hoped that there would be some "normal" recipes within that I could make and my family would enjoy.

I was pleasantly surprised to find some great tips and recipes that use many of the ingredients I have on hand in my pantry and cabinets, and especially new and different ways to utilize those ingredients.  A few of my favorites so far are: Pretzel-Mustard Crusted Pork Tenderloin Sliders (altered a bit from the original recipe to fit my family's tastes), maple glazed carrots, Connecticut Cajun Shrimp Rolls, Roasted shrimp cocktail salad, and a few more.  Though I must say that most of the recipes are ones that will need quite a bit of altering for me to cook them because of course they call for ingredients that I do not eat or keep on hand, but many did give me good ideas for new ways to cook favorite meals.

So, overall there are some good recipes I like, many that are ok and need a few changes for my family to enjoy but still most of them are ones with ingredients that are not common in our home or diet and will be ignored or used as ideas for my own recipes.

How can I make this Heavenly Recipe Healthier? Rich, Indulgent Ingredients but oh SO yummy

Ok, I'm a glutton for punishment as they say.  I was looking around Pillsbury.com for a fun and "healthier" desert idea, when I stumbled upon this photo and recipe - and I have such a weakness for chocolatey, fudgey, yummy goodies.  So NOT on my diet plan!  So, I'm asking all my friends out there in the Cyber World to help me find a way to still enjoy this scruptious desert but make it healthier, and still retain the yummy taste!  Any Ideas are Oh So Welcome!

Heavenly Hazelnut Torte with Mascarpone Cream

  • total time
    1 hr 50 min

  • ingredients
    7

  • servings
    8

  • Ingredients

1 roll Pillsbury™ refrigerated sugar cookie dough

1 container (8 oz) mascarpone cheese

2/3 cup Jif® Chocolate Flavored Hazelnut Spread

3/4 cup coarsely chopped toasted hazelnuts

    1/2 cup semisweet chocolate chips

    1/2 cup heavy whipping cream

2 tablespoons granulated white or vanilla sugar

    Steps

    • 1
      Heat
oven to 350°F. Let cookie dough and mascarpone cheese stand at room
temperature for 10 minutes to soften. In medium bowl, break up cookie
dough. Add 2 tablespoons of the mascarpone cheese, 1/3 cup of the
chocolate hazelnut spread and 1/2 cup of the hazelnuts. Mix with wooden
      spoon until well blended.

    • 2
      Press
1/2 of the dough mixture in bottom of ungreased 9-inch springform pan.
In small microwavable bowl, microwave remaining 1/3 cup chocolate
hazelnut spread on High 10 seconds; stir until spreading consistency.
Spread over dough to within 1/4-inch of edge; sprinkle chocolate chips
over chocolate hazelnut spread. Place remaining dough between layers of
waxed paper. Press into 9-inch round. Peel off one layer of paper. Place
dough side down over chocolate chips. Remove waxed paper; press edges
to seal. Gently tap pan on counter to settle. Sprinkle with remaining
1/4 cup nuts; lightly press into dough.

    • 3
      Wrap
outside bottom and side of springform pan with foil to prevent leaking.
Bake 30 to 40 minutes or until puffed and edges are set (center will
jiggle slightly). Cool on cooling rack 30 to 40 minutes or until center
is set but still warm. Remove side of pan.

    • 4
      Meanwhile,
in medium bowl, beat whipping cream and sugar with electric mixer on
medium speed until soft peaks form. Beat in remaining mascarpone cheese
with electric mixer on low speed until combined. Refrigerate.

    • 5
Serve wedges of warm torte with mascarpone cream.

There are no gimmicks, no short cuts, it's just how
you're supposed to live: a healthy balanced life. Lisa shows us in this
book, that nobody is perfect—but with a few minor tweaks, you can change
your lifestyle, be happy and be healthy.

    My Review:

Ok, nobody likes to diet.  I mean really LIKES to "diet" especially me.  Eating Healthy is always a good plan, but can be expensive and difficult at times so I was really looking forward to having some healthier snack recipes and ideas when I chose this book for a review.  Well, I didn't realize that this isn't a cookbook of healthy snacks, but a story of the author's journey to making changes in her lifestyle and diet that helped her lose weight and keep it off.

After she tried many well-known popular diets, Lisa Cain decided there had to be something she could do that would not only work, but keep working and make a difference.  In "Snack Girl to the Rescue" she explains how she makes little changes and looks at food a different way that really made a huge impact on her life and weight.

Some of the easiest tips to implement are:

put salad dressing on the side, not directly on the salad

don't have a bread or chip basket on the table

order grilled meats instead of friend

have a side salad instead of fries

    and many many more!

Just those little things make a huge difference in eating habits and healthier attitudes towards food.  Don't be disappointed though, there are many recipes in the back of the book that are pretty simple and easy to make.  Some of her ideas are ones I will personally implement in my life to kick start my healthier me attitude and others just don't suit me personally.  This is a great book to have on hand for ideas of how to make healthier and better choices when eating at home or on the go.

Skinny-licious Recipes that taste good, help you eat healthy and lose weight too. Review on Mom Loves 2 Read

    Skinny-licious-blog-tour-banner-Feb1-28

    About the Book:

Evans proves that you don't need to give up your favorite foods in order
    to slim down.

You can enjoy tasty recipes like Lime and Cilantro Shrimp
Skewers, Stuffed Red Peppers, and Cherry Chocolate Cake, all while
losing weight and feeling great. Healthy cooking has never been easier!

    My Review:

I have a whole slew of cookbooks, cooking magazines and recipe books around my home.  I have a few favorites that I use regularly, several with some favorite recipes highlighted or marked with some sort of sticky tag, and several that I plan to someday sit down and look through for new ideas.

When offered the chance to review a cookbook with healthy recipes to aid in healthier eating habits and possible weight loss, I was excited to give it a try.  I looked over all the recipes in the book and found several that I plan to try.  I like recipes that use items I keep in my pantry, keep on hand or at least am comfortable cooking with.  I do not like to have cookbooks or recipes that use expensive ingredients or ones that are unusual or not easy to find.

Skinny-licious has a combination of both - recipes with ingredients that I do not keep on hand or would not use on a daily basis, but also quite a few recipes that are easy, simple and fun to make.  I like the variety, and the options to try something new.  It is a nice cookbook to add to my collection and one that I will be using for several new recipes I can't wait to try!

Make your cupcakes unique, fun and tasty with Batter Babies ~ Review on Mom Loves 2 Read

Batter Babies are cake batter separators made specifically for
cupcakes.  With them, you can make half & half cupcakes - either
flavor or color combinations.  Made of a food-grade plastic, they are
reusable and dishwasher safe.  Remove before baking.  So simple to use,
even children can create their favorite cupcake flavor/color
    combinations.

    My Review:

Batter Babies take the ordinary and make it extraordinary.  A fun and fantastic way to make cupcakes into art.  My kids thought this would be a fun review to do while one of their friends' was over for a play date.  They helped me decide on what colors we were going to use for our cupcakes, then after I mixed up some yellow cake mix - I separated it into 2 bowls and added 2 different colors of food coloring.  We thought that would be colorful and fun.

After adding the two different colored cake mixes into the cupcake liners - using the Batter Babies as dividers, they looked so cute.  Then, we carefully removed the Batter Babies so we could bake our cupcakes . . . .

After smelling those yummy cupcakes baking, it was hard to wait for them to cool so we could decorate them.

And of course Eating them was even more fun . . . have to have lots of Sprinkles!

These Batter Babies are so much fun to use.  They come in a package of 6, so if you are like me and have quite a few cupcakes to make for hungry little monkeys, it might take 2 packages!  But it is definitely worth it!  My kids can't wait to make more cupcakes with these cute Batter Babies inserts - makes a fun and flavorful treat for birthdays, holidays or just for fun!
